“I am in awe of Dr. Rachel Issaka’s brilliant, brave, diligent work and research to save lives and protect and find the funding she needs to do it. I feel so lucky to call Rachel a friend, but what this city and region don’t know is that we are all so lucky, and this world is so much better, because we have Dr. Rachel Issaka in our midst, fighting an incredible fight against cancer, yes, but also against a system that is working hard to hold her work and the health of millions of people back. She is humble and measured in how she talks about her work, but I want to scream from the rooftops about her bravery and ability to manifest her work into existence, and that’s why I’m so excited to turn her favorite flavors into a special ice cream for her and get to recognize her publicly.”

Malva Pudding Cake
We take our classic sweet cream ice cream and fold in freshly baked pieces of traditional South African Malva pudding cake. Malva pudding cake is a moist toffee sponge cake soaked in a rich sauce of butter, brown sugar, and cream. We pair the cake with bright tangy swirls of homemade apricot jam, which is also found in the cake.

Women’s History Month honoree Dr. Rachel Issaka spent much of her childhood in Ghana, West Africa, an experience that continues to shape her work today. A practicing gastroenterologist and researcher at FredHutch & UWMedicine, she is focused on helping more people get screened early to prevent cancer deaths-especially in underserved communities in Seattle and across the U.S. Dr. Issaka leads an important patient-centered cancer screening program in the Pacific Northwest and her research helps shape health policy and everyday medical care nationwide. We are so lucky and proud to have Dr. Issaka in our Seattle community!
